The Ottomans were always Muslim.

Perhaps you refer to the Turkish people. The Turkic people were nomadic people who came from east Asia. Ong the way they came into contact with Muslims and accepted Islam. They continued to migrate and at time integrate in Muslim lands until they ended in Anatolia. There they set up the Seljuk Sultanate.

After the invasion of the Mongols, the Seljuk stste was weakened. The Seljuk state collapsed and Osman subsequently formed a state which led to an empire. This was the Ottoman empire who ruled over much of the Muslim world as well as parts of Europe.
