They don’t the ingredients and the processing methods of almost all mentioned are often said to be “top secret” but frankly they are not and the so called ‘secretiveness’ is nothing but a bell played promotion. While there is no ready available recipe online or somewhere else the ingredients and processing methods are known to anyone who have carefully done some research.

The actual protection these companies have is that no other brand is capable of gaining the recognition, legal permits and other licenses to acquire and process the ingredients and then market it. I remember reading somewhere that the Coca Cola holds rights to acquire and process Coca leaves necessary for making the cola while others can’t easily because these leaves in large quantities are regulated as they contain the psychoactive alkaloid Cocain.

So basically they don’t have to do anything special to protect the recipes.
Pepsi’s recipe have been lesser discussed for many reasons that may include that Coca Cola is more popular. But some recipes which are not much different from Coca Colas.

Also some countries require bottle beverages to submit the list of ingredients used and the process for making to distribute the drink within their territory, so in some places it is part of the public records.
